In my mind it does! This recipe came about because while I was at the grocery store last week, I saw tostadas on the shelf and randomly decided to put them in my cart. I’ve never even had a tostada before but they’re basically a gigantic round chip and I loveeeee me some chips in any shape or form!!! They’re obviously not a food I grew up eating {hence probably why I’ve never had one before} but they put a fancy spin on taco night and if you’re into a good crunch + an open face bite to eat, you will go crazy for them! To be honest with you, hard shell tacos are typically not my jam but for some reason, these I could eat around the clock. What’s more is that you can really incorporate whatever is in your fridge or freezer into the recipe. We happened to have cooked & frozen tail-off shrimp just waiting to be used but if you’re house is typically stocked with meat rather than seafood, chicken or steak would work well instead!! And you guys, the end result will BLOW YOU AWAY!!!!! These pretty babies are just as good as they look!!!!

Shrimp Fajita Tostadas
A fancy, yet EASY and delicious take on Taco Tuesday!

Ingredients
  1. 1 package tostadas
  2. 1 package cooked, tail-off frozen shrimp {Trader Joe's brand is always the cheapest}, thawed
  3. 1 onion, sliced lengthwise
  4. 1 yellow pepper, sliced lengthwise
  5. 1 red pepper, sliced lengthwise
  6. 1 orange pepper, sliced lengthwise
  7. 1 tbsp EVOO {extra virgin olive oil}
  8. 1 powdered fajita seasoning package
  9. 1 tsp powdered taco seasoning package
  10. 2 cloves of garlic
  11. guacamole
  12. shredded mozzarella cheese
  13. cilantro
Instructions
  1. In a large stovetop pan, sauté on medium-high heat onion and peppers with EVOO until soft {about 10 minutes}
  2. Add in the shrimp and mix well
  3. Add fajita seasoning; stir well into shrimp and veggie mixture
  4. Add taco seasoning and stir well
  5. Stir garlic into the mixture
  6. Reduce to lowest heat and let cook altogether for 3-5 minutes
  7. Plate your tostada and top with shrimp fajitas
  8. Top with guacamole
  9. Top everything with cheese and garnish with cilantro to your liking
  10. Serve hot & ENJOY!!!
