Recipe: White Chocolate {Mint} Bark

In honor of the holidays, I’ve decided to blog my first recipe, White Chocolate {Mint} Bark!  While I do love to bake and often come up with my own recipes, unfortunately, I cannot take the credit for this one.  A teacher friend of mine made this recipe for our annual Thanksgiving school feast and it quickly became the talk of the town by every single teacher who was lucky enough to snag one. I actually did not initially take one {i was never a big white chocolate fan} until I realized everyone was going gaga over it. As soon as I ate this simple deliciousness, I knew I had to get the recipe! And so I found out, the recipe* originated from Paula Dean via the, so right there you know it’s going to be damn good! 


  • 18 oz. white chocolate chips {I used nestle}
  • 3 cups skinny pretzel sticks, broken into small pieces but not crushed, then measured
  • 1 cup dry salted peanuts
  • 1 cup dried cranberries {I used Ocean Spray Craisins – Original}
  • Optional: half-cup crushed up candy canes. (I did this for the holidays and it added a delightful minty touch!)


  1. Line a rimmed cookie sheet with parchment or waxed paper.
  2. Melt the chocolate in a double boiler over simmering water until smooth, or melt in the microwave in a 2 quart glass dish. Microwave on high {100 percent} for 1 minute, stir, and microwave on high for 1 minute more. If necessary, microwave on high for 10 seconds more, and stir until the chocolate is melted and smooth.
  3. Stir in the pretzel pieces, peanuts, craisins, and *crushed candy canes. Stir well with a flexible spatula.
  4. Spoon into small blobs evenly spread out onto the prepared cookie sheet. {I made 8-9 rows of 4}
  5. Refrigerate for about 20-30 minutes, until firm.
  6. Store in a clear cookie tin!

Done and done. So easy. So delicious. Extremely sinful. Enjoy!!
