I love breakfast. I mean, who doesn’t?! Out of all the meals that one eats during the day, breakfast is definitely my favorite; always has been and I say with confidence that it always will be! So many of us, though, don’t have time for breakfast because we wake up later than we’d like and the last thing on our minds is trying to make pancakes from scratch. (Although that does sound nice in theory!)
To be honest, I’m totally guilty of this myself because I am pretty much the furthest thing from a morning person. If I have to set my alarm I would say that it’s going to be difficult for me to wake up… just ask my husband who has to listen to me press the snooze button at least 11 times (true story – yikes!) before I actually go from laying horizontal in the bed to standing up vertically and touching my two feet to the carpet floor. And then to think about waking up even earlier than I need to before work in order to make time to cook in the kitchen? Um, prob not going to happen.
HOWEVER, I do have some favorite breakfasts that are my go-to during the work week.
Not only are they are so beyond easy to whip up but they also taste delish and truly do the trick of holding me over until lunch at noon. Take a look…
Personal Tip: This tastes the best using toasted (on both sides) rye bread. Seriously delicious.
Quick Alteration: Use peanut butter or almond butter or even Trader Joe’s Speculoos Cookie Butter
. All will taste amazing in the morning!
And just in case I really can’t spare the 3 extra minutes to put together these oh-so-simple breakfasts, I, of course, have a few healthy go-to’s that anyone would enjoy:
1. A bag of the dry cereal of your choice (My current preferred = Trader Joe’s Organic High-Fiber O’s)
2. Your favorite kind of Luna Bar (Given my mint obsession, I’m sure it will come as no surprise to you that my fave is their Chocolate Peppermint Stick flavor)
3. Noosa Yoghurt – if you haven’t heard of it yet, you’re missing out! Here are the basics that you need to know: the brand comes from Australia, the serving-size per portion is the whole huge container, and it’s filled with tons of protein. It’s so creamy and thick in the best way possible. Also, it’s really good.
Oh but wait! So the times when I miiiiight run out the door forgetting to take any food with me for the entire day… it happens. In that case, I head straight to the Sbux (hey, I’m going there anyways for my favorite morning mint latte) and order their hot oatmeal. Just recently did I become super into it per the referral from a co-worker. Yum!
And then there’s the weekends where I actually do have a little extra time to spare so make a bowl of hot oatmeal from scratch. Add a little brown sugar, maybe a Splenda packet, and some honey. How can you go wrong? I call this my weekend specialty because that’s exactly what it is!
Yummy Add-Ins: Raspberries, blackberries, blueberries, cut bananas, strawberries, and/or flax seeds

One thing’s for certain: you don’t want to miss out of breakfast.
After all, you’ve probably heard all of your life that it’s the most important meal of the day!!

I have to agree. Breakfast is the best and most important! When I was teaching my husband and I would make breakfast bowls on the weekend ever few weeks. It was great to still get a good breakfast in even though on a tight schedule.
Now that I work from home I cook myself eggs every morning with a piece of toast and either a veggie or fruit.

Right, Cassie?!?! Your breakfasts bowls look so hearty and delicious! I’m totally going to try that! I love me some eggs as well but I usually save them for when I go out for brunch! Sometimes I like to eat breakfast for dinner and have eggs and toast then! Yum :)
