Well hello friends! Happy New Year!! I miss you! Oh so much! And I’m sure you want me to touch on that one time when I fell off the face of the Earth {again}, but I’ll save that for a later post, ok?! I am still on this Earth, don’t worry, and in fact, I am bringing another life into this world come early March! My husband, myself, and Brody are SO excited about becoming a family of four and I really do want to tell you all about it but right now I I’m going to stay on topic and and tell you all about the recipe I made for dinner last week and posted the photo of to my instagram. It was SO good and between all my social media networks, I got a bunch of requests for the recipe. Not surprised! Because first of all, it’s the easiest EVER and second of all, it’s a crowd pleaser for ALL.
Before I go on, I must thank my cousin Jay for being such a great sport and allowing me to steal the gift he chose at our annual family “white elephant” party {as if he had a choice though, ha!} AND I have to thank all my other family members for not stealing it from me!!!!!! What was this gift in question, you ask? Non-other than the famous Veggetti Pro! How have I ever lived life without one of these before?!?! It’s a serious game-changer you guys! You can get it via Amazon Prime in two days and it’s only $19! WORTH IT. For those of you who are wondering what the heck a Veggetti Pro is, it’s a veggie spiralizer that easily allows you to turn your vegetables into noodles! Well, they aren’t noodles in the traditional sense, but they mimic the look of noodles – most commonly the spaghetti variety – and provide a healthy twist to the carb-heavy pasta that you’re used to eating. Like I said, it’s a GAME CHANGER and especially with all those new years resolutions to stay fit and eat healthier, this is the perfect tool to help you achieve your goal =) Go order it asap because you’ll need it for this healthy, yet more importantly, delicious recipe!
- 2 chicken breasts
- 3 zucchini
- 1 cup unsalted, raw cashews
- 1 tbsp kosher salt
- 1 tbsp extra virgin olive oil
- 1 cup Annie Chun's Gluten Free Thai Peanut Sauce {more or less, to taste} - OR any peanut sauce to your liking, homemade or from a bottle!
- Bring a saucepan with 1/2 full of water to a boil.
- Add your kosher salt into the boiling water.
- Add in your raw chicken breasts, then cover the pot and take it off the heat.
- Let sit for 20 minutes, or until chicken is fully cooked and very tender. {If the chicken is still pink, put it back in and let it sit in the hot water covered saucepan for a few more minutes}
- While you are waiting for your chicken, whip out your Veggetti Pro, and using the thick spiral blade, start spiralizing all three of your zucchini.
- Once you have all your zoodles on a plate, cut them randomly so they are easier to work with and aren't so long.
- When your chicken is tender, take it out of the water and let it rest for a few minutes. Again, first make sure it is no longer pink prior to resting.
- Either shred your chicken by hand {one way to do this is by using two forks - this is what I did} OR I've heard you can take a hand mixer to the chicken and it works just as well. If you decide to try the latter, dump out all the water in your saucepan, put your chicken back in the pan, and run your hand mixer over it until fully shredded.
- Now place a large skillet over medium-high heat and add in your cashews - make sure they fit in a single layer. Top with the EVOO. Stir them often and roast them until they are a light brown color, about 3-5 minutes.
- Add in all your zucchini noodles {or zoodles as I like to call them!} to the skillet and cook, while stirring often, for about 3-5 minutes or until they become al dente in texture. Turn heat to low.
- Add the shredded chicken to your cashew and zoodle mixture on the stovetop and then add in your thai peanut sauce.
- Mix, mix, mix!
- Divide into 3-4 portions and serve immediately! Enjoy!
- *Annie Chun's Gluten Free Thai Peanut Sauce definitely has a kick to it. I typically do not enjoy spicy food but I do LOVE this peanut sauce!
- *If you make this and shred the chicken with your hand mixer, let me know how it goes!!! I've never done it but have heard great things and that it really works!
- *If you're rushed for time, feel free to boil your chicken and shred it in advance, as well as spiralize your zucchini in advance. Place the chicken and zoodles in the refrigerator and then cook everything over the stovetop later... which will take you not even 10 minutes to do.
Seriously you guys, my husband said it was one of the best dishes I’ve ever made! And he wants me to make it once a week, at least {his words, not mine}. I told him that I would gladly oblige especially since how easy it is to whip up!
