Ingredients

  • 1 cup dry oats I used gluten-free quick cook oats - any kind works though!
  • 1/4 cup almond butter or any type of nut butter you fancy
  • 1/4 cup honey
  • 1/4 cup raisins
  • 1/4 cup unsweetened coconut flakes or shredded coconut to take the flavor over the top, you can toast the coconut! I did not!! Ha.
  • 1/4 cup M&M’s mini m&ms would probably work even better!
  • 1 tsp cinnamon
  • dash of salt
  • 1/2 teaspoon vanilla

Instructions

  • Combine all ingredients in a medium size bowl. It should be sticky and come together pretty easily.
  • Refrigerate the mixture in the bowl for at least 45 min to an hour. {30 minute minimum!}
  • Scoop out a tbsp size amount of the mixture and use your hands to roll them into balls. Repeat process until you've used all of the mixture to make at least 12 energy bites!
  • Good luck saving them for the future {it's impossible} but if you do, store in the fridge for up to a week or you can freeze them too!
